If you have access to them, download digital elevation maps, and use them to create the landscape using HOG or TransDem (payware). This will create actual the landscape or close to it. Then all you need to do is lay your track and texture.

To take pictures in Trainz, press the PrintSrc key. This will place a picture file in the Screenshots folder.
