Editing Properties of Rolling Stock to Accept Certain Loads

How do I go about editing the configuration of rolling stock so I can get train cars to accept a specific set of products without breaking it?

My suggestion would be to take a look at the config.txt files of rolling stock assets that do carry the products you want to use. Bear in mind that the creators of those assets may have specifically created attachment points on the assets for the products to appear when loaded and this would be an added complication. However, if the asset is a box car or some other wagon where the loads would be invisible anyway then it should not matter - the commodities will be loaded and unloaded without any visible change to the rolling stock.
