A good reference is Valve Gear, which contains animated diagrams of the South and other valve gears.

Ha!!! Trust me to remember this after I posted earlier. A good place to find "older" technical information is http://www.lib.umich.edu. They have some older technical books like M.N. Forney's Catechism of the Locomotive. This is a good reference for a lot of railroad information including a lot of "lost" information on how Steam engines work.
