Sorry if this is a simple question but how do I add another consist to the list in surveyor?

Use the Get Consist tool on the Consist tab to do that.

Create a new route (not with the intention to actually spend months creating a route).
Make a long stretch of track, long enough to fit your dream consist on.
Add the train vehicles to the track so it forms one long train.
Go to the other tab of which you just selected your train vehicles; you can now point it at the train you made and create consist.
