WWII Troop Pullman cars

I don't recall seeing any, but Ben Dorsey made some Pullman and Harriman passenger cars that you can rename by editing the config.txt files.

Has anyone made the WWII troop transport Pullman cars?

Yes.

There were also hospital versions you might do a reskin of from these.

After the war some were converted to various civilian uses. I've seen occasional pictures of these but can't recall where.

The New Haven converted some to express/baggage cars. You can see where the windows were plated over (in the case of one work car, just covered with plywood).

Just so.

The Alaska Transportation Museum in Wasilla has several ex-ARR troop cars on rails. (Last visit, they also had a life-size cow moose made entirely of Duck Tape.)
