Which track, in TRS2004 or on DLS for TRS2004, has the lowest poly count?

Same question for bridges.

How can you tell the poly count of an asset?

You can tell the poly count for assets by using Trainz Objectz. There is a column on the grid when you load TO that shows the poly count for each custom asset.

Some of the most popular low poly tracks available on the DLS are:

MP track wood
MP track rusty
