You are supposed to know it the same way you are supposed to know it when driving a real train or a car: By paying attention to the signs.

Reading the terrain, just like you do when driving a car also helps. Example: You have to make a turn? You slow down, no matter what the speed allowed is.

If you were a real railroader, and for some reason didn't know the speed you were supposed to be operating at, you'd be expected to move at restricted speed, defined as a speed at which you could stop within half the range of vision an short of a stop signal, obstruction on the track, broken rail, or switch not properly lined.

If you're running a new route, whether on your ipad, or on any other Trainz platform, you should figure on running the route several times at slow speeds, and expect to reach the full speed only after several trips.

In the real world railroaders are expected to "qualify" on a route before they are driven. This means they are put in training with an experienced driver who shows the trainee what is expected where and when. As a Trainz user we don't have that luxury so our best simulation of this aspect of railroading is to run over the route slowly in an explorer-like fashion, meaning you take a train for a spin but move along at a restricted speed until you familiarize yourself with the route.

I am not sure if you can edit routes in your version ... But I like to place 3 signs, or 3 signals (distant, advance, and home) prior to an interlocking or station, warning to slow down.
