the industry has to be an "active" industry, ie with track actually connected to it & coded for products. It should then automatically be added to the list. If the industry is just a bunch of buildings near the track then you'll have to add something to make it active, either and active industry building or an invisible industry.
You set the train speed by placing Track Side speed signs.
