How to change amount of throttle notches in DCC Mode

Would anyone know how to change amount of throttle notches in DCC Mode for certain Locos? (or whatever its called in DCC mode)

Whitepass is correct. DCC Mode is basically the equivalent of a model train controller, hence the analog speed control dial (DCC stands for 'Digital Command Control' in case you were wondering).

As a result, Trainz uses simplified physics to match when running trains in this mode, which means no dedicated throttle notches. However, you can simulate it to an extent by moving the dial to the marks on the side of the dial at regular intervals, like using an actual model railway controller.

But yeah, if you want the authentic style of train driving then Cab Mode is the only mode to use. :)
 
In DCC mode:
W-WWWWWWW for increase/forward
X-XXXXXXX for decrease/reverse
S for stop
H-horn
B-bell
L-light
pantograph up/down is one I am unsure of ?

In Cab Mode:
R-reverse
F-forward
A-application
Z-lap
Q-release
W-increase
S-stop
X-decrease
C-dynamic braking
D-independant brake
Ctrl+D-decouple

I use these commands when driving in Cab mode: A S F Q W WWWWWWW X XXXXXXX C W WWWWWWW X XXXXXX C and Q-25 press's ... etc ... etc
