Hey, this isn't hard at all!

Pizza Delivery Train
I've had a go at driving in cab mode in 3 types of train. First was a steam engine, the J69T and then the FS GR940 030 (haven't found the independent brake lever on that) The hydraulic shunter, and an american diesel (I think both suffered from cab sway) and an electric which was easy once I located the levers. I found the whistle cord and buttons. I need to learn how to couple in reverse in cab mode. so, any tips when I am coupling in cab mode?

Use the keyboard shortcuts and go to external view. The shortcuts are in the manual or their own spreadsheet.

I know there is a reverser lever in the diesels and electrics, haven't found any in the steam engines. Ok, I have succesfully reversed in a hydraulic shunter and coupled. Took me a bit to figure out that the emergency setting helps when coupling, as any faster and the couples will break.

In the steam engines it is usually one you have to turn, or the big lever sticking out from the bottom of the cab. Try the steam loco tutorial to get used to at least that cab and type of steam loco.
