You should be looking at the Tri count not the Poly count. The poly count is misleading. A 4 sided polygon after all is 2 triangles. I guess this depends too on if you're using edit mesh or edit poly. Under edit mesh it'd display the actual tri-count under the polygon counter. Though, if you're using Edit Mesh, you're really going about it wrong.
