Is there a way to select the free roam camera and leave it there when you choose other trains? And when you do pick another train, you keep the option of clicking on the "tracking" icon to move to that train?

Yes, it is a no.
But, you should have a little more patience.

There are a number of cameras on the DLS based on "Dummy" locos etc. which you can place and switch to to get a fixed view. They can be a bit hard to find, post again if you need the KUIDS.

I think that being able to "Fix" and hold/return to a free roaming view would be a good idea.
