In no particular order (I apologize if most of my choices are biased in the fact they're West Australian but meh. :p)

WAGR V class 2-8-2
NSWGR C38 class 4-6-2
WAGR/Westrail/ARG L class/3100 class Co-Co (my avatar ;))
WAGR W class 4-8-2
WAGR G class 2-6-0/4-6-0

Pretty much all the QR Clydes, the 2100s, 2300s, 2470s, 2250s, 1720s.

For standard gauge, I really have a liking for SCT class.
 
steamers

My favorites are all steamers. Ill start from the top,
1. 3801 4-6-2, when I was younger she came to my hometown, and took us on the Taree-Wingham trip. Great loco.







2. 3830 4-6-2, came to Taree aswell, another great ride







3. Garrat Class 61, now this one is special. I went to Canberra with my family and we went to the rail museum, we were allowed into the yard. It was full of old rolling stock and bogies, between them was a Garrat Class 61! We climbed into the cab and it was huge! Rusty and lifeless though, but it was awesome! Picture isnt of it though, couldnt find one.

4. SAR 520 ARHS, beautiful, just look at it!








Thats mainly the 4 Aussie locos I like, but then again, all steamers are legends in their own right.
