I could throw something together except I'm still learning the product myself at this point. But perhaps I'll play around with this notion; I have the equipment and video experience to do this pretty easily.
Ultimately it comes down to what the "YouTube" tutorials are trying to teach the viewer? Which facets of the program are you most interested in learning about? Creating terrain, layout design, just running the trains? GUI interface?

You might find the stickied thread at the very top of Surveyors, Operators and Engineers of much help to you. It's doesn't really fit the bill for a tutorial, but helpful nonetheless.
