Is there a way to make a turntable not stick to the baseboards without showing the empty "void" below? Any help or suggestions are appreciated.

Not that I'm aware of, the reason they have the digholes below them is so the pit doesn't get filled with whatever terrain that's below it.
 
I requested that bendorsey do one without digholes, so that it won't snap to grid.
It has no apron ... and reguires you to place your own digholes ... and cover up the edges of the digholes with an asphalt road spline(s).
The turntable can be placed anywhere, as it does not snap to grid.

It was allot of work to put it in, but it worked out great on my EBT route
It allows me custom fine placement, and rotation, and lets me install an ashpit just to the side of the turntable, and inspection pits inside the roundhouse floor.

The function of "sticking to the baseboards" is controlled by the snapmode and snapgrid tags in the assets config.txt file.

The empty void is created by a "Dighole" to stop the pit filling up as RyansTrains explained above. As with snapmode this is controlled by the dighole tag in the assets config.txt file - removing the tag removes the dighole(s), unfortunately "Digholes" snap to the grid whether you like it or not !

I have never found way to work around the problem other than using (or designing) a turntable that does not have a pit below baseboard level.
