Were can I find the serial number for Trainz 2019 so I can register it this was a digital download?

The serial number is not needed any longer by us. Your Trainz versions are now tracked according to your account on the My Trainz servers. This account setup also determines which version of Trainz TRS19 and up you own. Should you decide to upgrade at some point, it's only a matter of purchasing the new version. Once you do that, these other program features are enabled automatically.

I bought my TANE version on the Mac App store. My Trains doesn't show me having a version of Trainz at all. I only ask because I'm considering updating my OS. Would like to do a full erase and install.

Zec did have to fix my account for TANE to show in my timeline, though. Would I need to reinstall from the app store should I need to?

You should be able to also download the installer from your My Trainz account.

Check up in My Trainz and look for the download.

You can test that by installing that version as another copy and not overwriting your current install.
