Since I started with Trainz I have been researching and putting together the routes from Manchester to Leeds and Sheffield. Needless to say I have started many many times as I find better DEM data (open OS data) better maps old maps.co.uk. The major problem for me is getting the gradients correct and the "feel" right. DEM data is good at low resolution and for background across the Pennines but because it is so low resolution, lumpy Pennine landscape features are smeared out. Many of the old sidings built on the sides of hills are difficult to replicate in Trainz because the flatten tool only produces flat surfaces and not smooth angled surfaces. My latest version is based on the early sixties and runs from Droylsden to Huddersfield with routes from Fairfield to Hyde Junction, the old OAGB, Stalybridge to Diggle via Micklehurst and via Mossley and Greenfield to Oldham. Diggle tunnel to Huddersfield track work is substantially complete. I also have drafted but not completed the branch lines to Meltham and Holmfirth and Kirkburton and Huddersfield to Penistone. Laying the track is the easy bit populating it with mills and works as I remember them as a boy is far more difficult. It is far from release so don't hold your breath.
To answer you original question, I only know of Leeds - Sheffield as suggested by Chris above. Recently I have seen Huddersfield, Bradford and Leeds Stations released but from a quick look they are more modern but you may want to look at them as they seem to be well developed.
I hope this helps
