Some people may know this already, but I know others have asked, including myself. Anywho, I just stumbled onto how to change the directional arrows of track in Surveyor. Go to the 'Tracks' tab, and then the 'Trackside mode' (middle circle on top), and then click on the button on the bottom labeled 'Junction Direction', and then you can click on the appropriate arrows for any particular junction.
