Only for those that support such changes (which I don't think there are many) - those that do support it should have the option if you Ctrl + right-click on the loco/train car and use View Details.
Well the Mid Sodor engines I was working with did not give me options to do so when I viewed details so the must not have support for that. But thank you for the regardless.
