Check the (undecorated) Multi Industry New tracks by Bekaember, kuids starting with 102376: Many if not all of them are height-adjustable, which is handy for suspending them above the water as Vulcan's ore barges require.
Maddy25 did a really nice, rusty ship loader (could imagine it as an unloader too). I think the kuid is 124017:10112:1 It's not interactive but is good scenery for the dock.
I also had a go at some non-interactive granular solids unloaders. My kuid is 68213:
