So off the top of my head I know for a fact railroads employed welders, boiler makers, carpenters and painters for in depth maintenance and repairs. What else am I missing? I know there's more to the list than that.

so what is the point your trying to make here a little more Information on what you want... Are you looking to find the Assets for trainz or are you looking for someone to create them for the game... A search on the DLS under the Author MSGSapper shows a whole pile of people you can add to the game and its the ones your I assume your looking for?
 
I would add blacksmiths, machinists, electricians, and a foreman. If you are looking for historical staffing levels , many railroad historical societies have their railroads books and the payroll/timebooks should be able to point you in the right direction. Don't forget they would be supported by supply clerks and various office folk like draftsmen, secretaries, and accountants.
