I don't know what edition you own, but you can go to where ever TRS19 is storing your content (seesettings > install tab for installation location) and enter the packages folder.
There, you can delete the built-in routes and whatever else you want.
The following are built-in items (might not receive all if you own the regional edition):
SC490 - East Coast Main Line - Dundee
SC484 - Cornish Mainline & Branches (TRS19 Builtin)
SC485 - Niddertalbahn (TRS19 Builtin)
SC486 - Canadian Rocky Mountains - Golden BC
SC407 - Sebino Lake
Once you deleted the items you wanted, do a database update so they dont show up in Trainz. Just keep in mind that since you deleted the items, the DLC downloader will appear when you start Trainz.

I'm sharing my experience just as info as something to consider. I, like you, initially tried to keep my routes down to the "things I wanted and liked." I had the full TRS19 package but I installed the U.S. routes only because I had no interest in "foreign" locos, cars, routes, etc. But as I downloaded Freeware I kept having missing assets. What a pain to find all those missing assets! I then installed a 1TB SSD and moved my data folder to it. I installed ALL the TRS19 Routes. I joined up for plus and proceeded to download everything I could. The result? I now have almost zero "missing assets" when I grab freeware from Content Manager. Life is so much easier. And if I do have a Loco or Route that I absolutely don't want to see, I just disable it in CM.
I also discovered another thing. There are things to be learned from running through the provided routes even if you don't care for the location, era, etc. I run everything at least once. I had no desire to run the Japan Model Trainz route (part of my Plus benefit) but when I did I found that I was amazed by the layout and session. Multi-level tracks, plenty of AI trains... a Lot to like. I'm not saying you will like and enjoy everything, but you will learn and see some things to be of benefit.

I tried to delete the Sc484 and all its folders; then, rebuilt database. The Cornish route and sessions disappared but there are missing dependencies in the other routes and sessions. So, deleting an Sc folder, it delete the corresponding contents; may be not all, but some built-in content.
