UP 87008 is a Pullman Standard 3 bay car used primarily for grain products, i.e. wheat, rice, soy, malt, etc. It has trough type hatches on the roof for loading.
ACFX 27265 is an American Car & Foundry 3 bay covered hopper car. It appears to have 6 round hatches on the roof for loading. Usually covered hoppers with the round hatches are used to transport fertilizer, plastic/resins, pot ash and all sorts of dry chemicals. ACF also makes this car with trough type hatches for transporting grain product as in this BNSF grain train.

typically i've seen the 3 bay hoppers carry grain, and the granules used on roofing (among others). plastic/resin is often in 4 bay covered hoppers w/ aluminum tubes/shafts on the bottom.

CMO 10000 is a 5200 cubic foot covered hopper with a load limit of 221,600 lbs, tare 64,400 lbs

GACX 186 is a 5660 cubic foot covered hopper with a load limit of 219500 lbs, tare 66500.

Both of these are food grade cars for bulk grains and flour.

The BO ("B&O") car is really rough - I can't read the number well at all. It's probably old enough that it's been repainted and re-stenciled as a CSX car. Looks like it might have been hauling dry chemical. Maybe cement, but it's awfully large for that service.
