An Irishman spells Guniness, (as in I spell, you spell, he spells etc.). There is no apostrophe.
Adding an apostrophe after a word is normally used to shorten the following word, e.g. "A spell's been cast over Auran to sort out the DLS." instead of, "A spell has ... " etc.
