Because this is a company aimed at making a profit in an already small market segment.

That and they're a small company that can't really afford a to have developers for every OS. Heck I don't even think they have a developer for the largest (market share) mobile platform, Android.

Not to mention the fact that the trainz asset database is a .net database. A database which is already prone to corruption when running on windows. I shutter to think what it would do running in Mono. I used to run Trainz UTC, 2010 in wine no problem though.
